BLACK FOREST CAKE

Black Forest cake is the English name for the southern German Dessert Schwarzwälder Kirschtorte (literally "Black Forest Cheery torte").

Typically, Black Forest cake consists of several layers of choclate cake, with whipped cream and cherries between each layer. Then the cake is decorated with additional whipped cream, maraschino cherries, and chocolate shavings. In some European traditions sour cherries are used both between the layers and for decorating the top.

I made this cake for my DH on his birthday.I was really scared when I started to make it thinking will I be able to achieve the final result ...I wanted ,The cakes that I had tasted before.But the recipe was so easy to follow...the result was awesome.(This is not me saying that,but my dear DH).So 'njoy .


Ingredients

For the Cake: (Makes three 8” size cakes)
6 eggs1 cup sugar
1 tsp vanilla extract
1/2 cup all purpose flour
1/2 cup cocoa powder
1/2 cup unsalted butter melted

For the Filling:
1/2 cups heavy whipping cream
2 TBs confectioners sugar
1/2 tsp vanilla extract
1 1/2 pound jar pitted red cherries, drained

For the syrup:
1 tbsp lime juice
½ tbsp Sugar
½ cup Water

Directions
1.Preheat the oven to 350 degree F.
2.Grease the cake pans and then line them with wax paper.
3.Pass the all purpose flour and cocoa powder through a strainer or sieve two times to ensure that there are no lumps in the dry ingredients.
4.Whisk the eggs,sugar and Vanliia extract till the mixture becomes thick and changes to a pale color.
5.Gently fold in the dry ingredients in the egg-sugar mixture and then add the melted butter.
6.Divide the mixture in the cake pans and level them.
7.Bake for 15-18 minutes till the cakes are completely baked.They should be springy to touch.To check if the cakes are baked insert a toothpick in the center of cake and if it comes up clean,the cake is baked.
8.Let the cakes cool and come to room temperature.This is essential otherwise the frosting on the cake will melt from the inner heat of the cakes.
9.Make the syrup using the ingredients listed for the syrup.You can also add the water in which the maraschino cheeries are stored in,to the syrup.
10.Prick the 3 cakes top layer with fork or skewer and then sprinkle the syrup generoulsy on all the layers.
11.Whip the heavy whipping cream in a bowl till it starts to thicken and then add the confectioners sugar and vanilla essence and continue to beat till the frosting thickens.Don't overbeat the cream ,otherwise it would result in seperation of butter and water from cream.
12.Start assembling the cake by applying the cream on top of first cake and then spread a third of the cherries on top of cream.Place the second cake on top of it and repeat the process.
13.Top with the third cake and then apply the remaining cream on top and sides.Decorate with cherries and frosting.

Tip:-
1.To keep the plate on which you are serving the cake clean,put pieces of wax paper beneath the lowest level of cake ,all around the cake platter.When you complete the frosting job,just remove the wax paper layers and voila you are saved the job of cleaning or transferring the cake on anothe platter.
