This is a Sweet that my DH just loves and cannot have enough of it.I learned this from my mother-in-law some time back and had been practising ever since.Finally I got the Seal of approval from DH.
Ingredients
1 cup besan
½ cup Ghee
¾ cup powdered sugar
¼ tsp Cardamom powder
½ cup Ghee
¾ cup powdered sugar
¼ tsp Cardamom powder
¼ cup Almonds
Directions
1.Soak the almonds in water overnight,so that it becomes easier to remove their skin and sliver them.
2.Take a heavy bottomed pan and put ghee in it and then add the besan and let it roast on low heat ,stirring occasionally to avoid the besan to stick on the bottom of the pan .Also be careful not to roast it on high to avoid the besan from burning.Cook the besan till the raw smell disappears.
3.Remove from heat and wait for few minutes before adding sugar and cardamom powder.The reason for doing this way is if we add sugar when the besan is really hot ,then the sugar will start dissolving due to heat and leave water which will make the besan runny. (I made it bold,because this is very important)
4.Add half of slivered almonds and mix well.
5.Apply ghee on bottom and sides of a plate/tray and spread the mixture on the tray.
6.Spread the remaining half of almonds on top of the mixture.
7.When the mixture is set cut into small squares or diamonds.
8.Besan ki burfi is ready to be eaten.
Tip
1.If you forgot to soak the almonds overnight ,Not a problem.As soon as you remember that you forgot to saok the almonds,soak them in hot water and put it in microwave for 2-3 minutes.The skins of almonds will fall of easily.
