VEGGIE QUESADILLA


A Quesadilla is a flour tortilla folded in half around a savory filling, as of cheese or beans, then fried or toasted.Exactly what constitutes a quesadilla varies from region to region and between the U.S. and Mexico and is not universally agreed upon by chefs. However, it is generally agreed that the quesadilla is cooked after being filled or stuffed.While cheese is the most common filling, other ingredients are also used in traditional Mexican quesadillas, including cooked vegetables, mushrooms, and meat.
My version of Quesadilla consists of Vegetables but you can also add roasted chicken,spicy shrimps etc and it still tastes yummo!!!

Ingredients
1 tsp Canola oil
1/3 cup shredded Carrot
2 tablespoons diced onions
1 tablespoon diced Red Bell Pepper
1 tablespoon diced Green Bell Pepper
1/2 can black beans -mashed
1 dash cayenne Pepper/Red chilli powder
1 dash Black Pepper
1 dash salt
Wheat flour Tortilla (or any soft tortilla you like including flavored and corn tortillas.)
1/8 cup shredded Fat free Cheddar Cheese
nonstick cooking spray
Salsa (Side Servings)
Fat Free Sour Cream (Side Servings)
Guacamole(Side Servings)

Directions
1.In a frying pan that has a bigger diameter than the tortillas, saute the vegetables in the oil over medium/high heat for 5 to 7 minutes. Season with peppers, and salt.
2.Pour the vegetables into a bowl, and place the frying pan back on the heat to medium/low.
3.Open the can of black beans and drain the beans over a strainer.The Reason for doing this is the brine(liquid) containing black beans is full of Salt.
4.Microwave the beans for 1 minute and mash the beans .Put it in the non stick pan and add a pinch of cumin powder,coriander powder,cayenne pepper.Adding these spices adds a different kind of smokiness to the refried beans.Mix and let it heat for 1-2 mins.
5.Spray Non stick Spray and place one of the tortillas in the pan and let it cook on one side to remove the uncooked taste.
6.Take the tortilla and spread the mashed beans on half of the tortilla.Also spread the vegetables over the refried beans, then sprinkle the cheeses over the vegetables.
7.Fold the tortilla in half and cook for 1 to 2 minutes, or until heated through and the cheese is melted.
8.Flip quesadilla over and cook 1-2 min more.
9.Slide the quesadilla onto cutting board and slice it like a pizza into 3 equal pieces.
10.Serve hot with fat-free sour cream, salsa, Guacamole and shredded lettuce on the side.
