This winter most of our dinners comprised of soup and salad and sometimes accompanied by bread.I love making this soup as it is very simple and easy to make ....a no fuss soup and does not require many ingredients.
Ingredients:
2 tblsp Olive Oil
2 cup Fresh or Frozen Corn kernels
1 green onion-finely chopped
1 cup Chicken broth or Stock( can be replaced with water)
1/2 tsp Garlic paste
1 tsp Black pepper
Salt acc to taste
1 tsp Italian Seasonings
Hot Sauce acc to taste
Soya Sauce acc to taste
2 tblsp Corn Flour (optional)
Directions:
1.Boil the corn kernels in chicken broth or water till they are tender.
2.Strain the corn kernels and save the stock they were boiled in.
3.Keep 1/2 tblsp of corn kernels aside and blend the remaining kernels.
4.In a soup pot heat olive oil and add the garlic paste,green onions and then add the pureed corn.
5.Stir it for 2-3 mins.
6.Add the stock that was kept aside and let the soup come to a boil.
7.Add the seasonings to it and serve it hot.
8.If the soup is too thin ,you can mix cornflour with cold water to make a paste and then mix it in soup, stirring the soup continously.
Tip:-
1.Extra Salt in the soup...no problem follow this tip.
2.Soup too runny ....? and you are all out of corn flour,no problem ....follow this tip.
