SWEET CORN & BLACK BEAN SALAD


















A colorful,easy and nutritious salad that goes with many things.Seafood,Soups...!!!! Endless Possibilities.
Ingredients
1-15-ounce can black beans, drained and rinsed
1 cup frozen sweet corn kernels, thawed
3 medium tomatoes, seeded and chopped
1–2 roasted bell peppers, seeded and chopped
½ medium red onion, chopped
1/2 Zucchini finely chopped
1/4 cup fresh cilantro leaves, chopped
1/4 Jalapeno, chopped fine
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 tablespoons freshly squeezed lime juice
1 tablespoon Balsamic Vinegar
cilantro leaves for decoration
Directions
1.Combine the rinsed beans,corn,onion,tomatoes, bell pepper,Zucchini,cilantro,Jalapeno,salt,black pepper in a mixing bowl.
2.Pour the lemon juice and Balsamic vinegar over the salad and mix well.
3.Let the salad sit at room temperature for a hour to develop flavors.
4.If needed ,adjust the seasonings and serve garnished with cilantro.
Serving Suggestions:-Pan Seared Salmon,Oven Baked Tilapia.

PICKLED RED ONIONS

Pickled onions are a popular pickled food consisting of small onions pickled in a solution of vinegar and salt, often with other preservatives and flavourings.You can put these in sandwiches, or use them to “add life” to any dish.Pickled Onions really taste yummy with Cholle Bhature,Makke ki Roti-Sarson Ka Saag and even chicken dishes.

Ingredients
2 large red onions
1 1/4 cups red wine vinegar
5-6 tablespoons sugar
3 teaspoons salt (or to taste)
1 teaspoon black pepper (or to taste)

Directions1Peel & remove the skin of onions.
2.Place the onions into a large bowl.
3. Sprinkle with salt and toss to coat, then let stand for about 30 minutes.
4. Rinse the onions under cold water and drain very well.
5. Place the onion between paper towels and pat dry, then place in a bowl.
6. In a small bowl, whisk together the vinegar, black pepper and sugar.
7.Pour this mixture over the onions in the bowl and toss to coat well.
8. Place in the refrigerator for about 2 hours before serving.

1.If you want to serve Red onions as accompaniment with Indian Dishes but don't want the raw smell,follow this Tip.

SPRING SALAD

As far as I can remember I loved eating Salad,as did my Father and my Dear Bro.But the big fight was always about who would cut Salad.My Bro would not have any meal without Salad.Now whenever I make any Salad ,I always do remember him.....as he is so far away .So...this is for you bhai.




Ingredients
1 Small Yellow Onion
1 Tomato
1 Celery Stick
1 Zuchinni
1 Carrot or 6-7 Baby Carrots
1/4 Cup Corn Nibblets

Salad Dressing
1/4 tsp spicy mustard
1/4 tsp lemon juice
1/4 tsp Olive Oil
Salt
Black pepper

Directions:
1. Cut all the Veggies for the Salad (except the Corn Nibblets off course).
2.Mix the ingredients for the Salad Dressing and Pour it over the Salad.
3.Chill the Salad before serving.
