Back with a Murg- Murg Makkhani

Hello fellow followers,
I don’t even know how many followers I have . I know that I have been MIA for a long time ( well 8 years to be exact; bit who is counting 😊). It’s not that I have not been cooking; it’s just that I lost my art of  putting my actions in words. So here I am trying it again. Bear with me as I dawdle my way in the blogging world again with the recipe for “Murg Makkhani” aka “ Butter Chicken”.
This is made in my favorite kitchen tool Instant Pot(IP). It is my sanity saver for crazy busy day. This recipe needs 12 minutes of cooking time and is really yummy.

Ingredients:-
1.5 lb. boneless, skinless chicken (don't worry about cutting it into pieces)
2 tbsp. butter
1 green chili
1 tsp. cumin seeds
1/2 onion large, cut in pieces
2 tbsp. ginger garlic paste
4 tomatoes cut in large pieces
1/4 cup cashews
2 tbsp. dried fenugreek leaves
1/4 cup water
1/4 cup heavy whipping cream
1 tbsp. honey

   Spices:-
     1/2 tsp. haldi
     1 tsp. coriander powder
     1 tsp. Red chili powder
     1/2 tsp. Garam masala
     1 tsp. salt

  To Powder:-
    2” sticks cinnamon
    5 green cardamom
    2 black cardamom
    1 tsp. black peppercorns
    1 tsp. cloves

Recipe:-
1. Start IP in sauté mode.
2. Put butter in IP and let it melt.
3. Then put diced green chili.
4. Add jeera seeds and let them crackle.
5. Add the powdered spices.
6. Except chicken, cream, honey ; add all the ingredients to IP. Place chicken on top of ingredients. Close the lid with vent in sealing.
7. Set the IP to manual for 12 minutes. After the manual cycle is done , leave the IP to release pressure naturally (NR) for 10 minutes & then release the remaining pressure by turning the vent to venting (Manual Release).
8. Remove chicken carefully. Blend contents in IP with an immersion blender.
9. Add cream & honey . Stir into sauce.
10. Cut chicken to smaller pieces & add back to sauce. Stir them into sauce.

Serve hot with Naan, roti or rice.

Dhania Chutney

Chutney is a word incorporated into English from Hindi, describing a pasty sauce in Indian Cuisine.Chutneys usually are wet, having a coarse to fine texture. In the past, chutneys were made using stone mortar and pestle.Nowadays, electric blenders replace the stone implements. Various spices are added and ground, usually in a particular order.
Chutneys come in two major groups, sweet and hot; both forms usually contain various spices, including chili, but differ by their main flavour. The Various types of chutney are-

1.Coriander(Cilantro)
2.Mint (Usually Coriander and Pudina Chutneys are also referred to as Hari(in Hindi Hari means Green) Chutney)
3.Tamarind Chutney(Imli Chutney, also referred as Meethi Chutney as in Hindi Meethi means Sweet)
4. Coconut Chutney
5.Prune Chutney
6.Tomato Chutney
7.Red Chili Chutney
8.Green Chili Chutney
9.Mango Chutney(made from raw ,green mangoes)
10.Cilantro Mint Coconut chutney
11.Tomato Onion chutney
12.Peanut chutney
13.Garlic Chutney
       to name a few
American and European styled chutneys are usually fruit, vinegar and sugar, cooked down to a reduction.
Flavorings are always added to the mix. These may include sugar, salt, garlic, tamarind, onion, or ginger.
Spices most commonly include fenugreek, coriander, cumin and asafoetida.

Ingredients
3 rounded cups fresh cilantro leaves, chopped (some stems ok) packed lightly
1 small onion-peeled and chopped

small piece of ginger
1 -2 tsp jeera (cumin) seeds
lime/lemon juice as per taste
salt per taste
1 -2 green chilies as per taste
1 tbsp unsalted peanuts

Directions
1.Wash the cilantro leaves very well and place the cilantro leaves, chopped onion, ginger, chilies and unsalted peanuts in a blender and blend until smooth, adding a little water if necessary.
2.When a fine paste is formed add the seasonings and lemon juice, adjusting seasonings if necessary.
3.Eat this with Indian food (including as a dip for poppadom), use as a condiment for roasted or smoked meats and poultry, serve with grilled foods, including fish.
'njoy!!!

Tips:-
1.You can store the chutney in the refrigerator for a week and it retains the same fresh green color.
2.If you want to make chutney in bulk and freeze it there are two ways to go around it.
     (a) Make the paste as written in step 1 and instead of adding water ,add vegetable oil to blend the  cilantro. Also do not add salt and lemon juice.Store the paste in an airtight container in the freezer and whenever you need it,just add the required amount of lemon juice and salt.
     (b) The second method....which is tried and tested more often than I care to admit .This trick was shared by my friend Sonal.Make green Chutney the way suggested above.Keep as much as you require for use for a week or so in an airtight container in refrigerator,For the rest-spread the chutney inside a Ziploc freezer bag and put the freezer bag vertically in the freezer ,till the chutney freezes. When you are ready to use the frozen chutney, open the Ziploc bag  and the frozen chutney can be snapped just like chips.Let it thaw at room temperature or if in hurry, thaw it in microwave for few seconds.

"O'Papa" ke Sukhe Cholle

The Title yet again may sound confusing. How can a simple dish as Sukhe Cholle have a name "O'Papa " ke Sukhe Cholle.Well this anecdote again comes from my childhood.Growing up in Bhopal(state capital of an Indian State M.P.),there were very few restaraunts that we would go to,reason being my mom had a very sensitive palate and there were times she would get sick from eating if the food was not cooked properly or the oil was old.
Then came along a new restaraunt "O'Papa" ....ohhh the memories me and my brother have of the yummy food they had,and the good point was our Mom was never scared of eating there. That place is closed now for 15 + years but we still remember the Masala Dosa,Paper Dosa,Chow mein,Sizzlers and finally the pindi cholle or sukhe cholle(they were to die for).Thereafter whenever my sweet brother wanted Ma to make cholle he would say "O'Papa " wale(that means the ones that were made in O'Papa)

HEARTY HARVEST ST-OUP

Harvest is the season when the evenings start turning chilly.I personally prefer having a hearty hot meal at the end of day .A meal which is filling yet does not require too much work ( by work I mean ..not cleaning too many utensils). It is called a "St-oup" because it is a soup with the consistensy of a stew.
This soup has all the ingredients you can find in the fall season. This is a totally vegetarian soup with kidney beans, a wonderful source of low-fat protein. The recipe is as follows.

Tex-Mex Black Bean Burgers

This is one of my go-to dishes on the weekends, when I don't want to spend my time cooking, but need some good, hearty, comfort food to fill me up.We have tried vegetarian burgers (the frozen kind) you get in many stores, but always found that they needed something more ...like the spices I crave  or as my dear Husband says...they lack your touch,so finally we started making these faster version of burgers at home, but to remind you burgers and fast food does not mean we are comprimising on nutrition.
Black Beans are a large source of proteins and it does not stop at that. They are a big source of multivitamins like vitamin K, vitamin C, manganese, vitamin A, dietary fiber, potassium, folate, iron, magnesium, thiamin, riboflavin, copper, calcium, phosphorus, protein, omega-3 fatty acids and niacin. Black beans are also a very rich source of fiber, these nutrients play important role to prevent cholesterol from becoming oxidized and heart disease.(I think now my mom will be satisfied ,that I am not feeding my husband fast food.)

Ingredients
6 Whole wheat burger buns
1 can (28 ounces) black beans, rinsed and drained
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1/2 white onion finely chopped
1 carrot finely grated
1 tsp hot sauce(more if youlike your burgers with a kick)
Salt to taste
1 tsp cumin powder ( to give the burgers a smoky flavor)
1 tsp coriander powder
1-2 tsp taco seasonings
1/4 cup finely chopped cilantro
1 tsp lemon juice
Bread Crumbs ( to bind the burgers)
Salsa

Suggested Toppings
Red Onions
Tomatoes
lettuce
Avacado Slices
Cheddar Cheese Slices or Shredded Mexican Cheese
Carrot Slaw

Directions
1.Heat the extra virgin olive oil in a medium sized skillet over medium-high heat. Add the garlic and onion; saute 2 minutes. Then add the shredded carrot; saute until vegetables are tender, about 2 to 3 minutes. 2.Add all the seasonings and hot sauce. Remove the skillet from the heat.
3.Transfer contents of skillet to a large bowl. Stir in black beans and chopped cilantro. Using a potato masher, thoroughly mash all ingredients.
4.Add bread crumbs (just enough ,so that the black bean mixture starts binding together).Shape mixture into 6 burgers.
5.Place burgers in the refrigerator  (to harden) for 10-15 minutes.
6.Lightly coat a large skillet with extra virgin olive oil. Heat over medium-high heat. Add burgers and cook approximately 5 minutes per side.
7.Alternatively you can grill the burgers on an indoor grill.I use my George Foreman Grill (I am in love with it.)
8.Finally to assemble the burgers-warm the burger buns on a skillet. You can also use a little butter while warming the buns.
9.On a burger bun, first put some lettuce leaves, then slices of onion, tomatoes, avacado then the burgers.Top with salsa and slices of Onion and tomatoes.
10.Enjoy with a cooling limeade.

Tips:-
1.Please remember to drain the black beans from the liquid they are stored in ,as the liquid contains too much salt.Rinse the beans in fresh water. If the black beans don't look too soft to be mashed,Put them in the microwave with 2 tblsp of water for 2-3 mins.

MASALA CHAACH (BUTTERMILK)

Chaach is Indian skimmed buttermilk with live-culture.The milk is boiled, cooled down to warm, fermented to make Dahi (Yogurt). The Dahi (Yogurt) is churned in the cool morning hours. The Makhan (White butter) would float that is skimmed off. After the butter has been removed, the remainder is called Chaach. Chaach is low in fat (since the butter was removed), with live culture, and most of the lactose was changed into the lactic acid.
American Buttermilk is different from the one I described above since buttermilk has evolved overtime from olden thin skimmed cultured beverage to modern thick cultured buttermilk that may not be skimmed. In the olden days, the cream was skimmed off the raw milk. The cream was collected for a few days. During this time the cream became sour from the natural good bacteria present in the raw milk. The cream was then churned to separate Butter which was skimmed off leaving behind the fluid called as buttermilk. The buttermilk had live-culture, skimmed, and thin. The modern buttermilk is a form of clabbered milk. Culture is added to pasteurized milk. The milk may be skimmed, 1%, 2%,or regular milk. The fermented milk is thick like clabbered milk (not thin like the old buttermilk made by separating butter from cream) with live culture. The modern buttermilk is thick, has tart taste due to culture. The buttermilk may be may also be pasteurized so the culture is not alive.

Well,I am glad we are over the science and explanation part of what Chaach or buttermilk is,so I can tell about how good Masala Chaach feels on a hot humid day.Indian summers ,as many of you know are very very hot and the only thing that helps is keeping hydrated through refreshing cool drinks.

1 cup of fresh curd (dahi)

3-4 sprigs of mint(pudina)
3-4 sprigs of coriander
1/2 tsp of Cumin seeds
1-2 pepper corns
Rock salt (or normal salt) as per taste
Chaat masala (optional)

RAJMA MASALA

Ask any Punjabi staying away from Home ,"what do you miss the most in home cooked meals"? Rajma Masala is what the majority will answer. To put it correctly most will answer "Ma ke haath ka Rajma Chawal"(Rajma Chawal made by my mom).I Keep this dish in the category "Comfort Food".Here is what I think is a simple recipe of Rajma.

Ingredients
Rajma (Kidney Beans)-1 cup
Water-4 cup
Asafoetida-1 pinch
Red chilli powder-1 tsp(more if you like it spicy and hot)
Salt to taste
Turmeric powder-1/4 tsp
Green Chilli-1(optional)
oil-2 tbsp
Garam Masala-1 tsp
Coriander Powder-1 tsp
Tomatoes-2 cup pureed
Garlic-1 tsp (minced)
Ginger-1 tsp(grated)
Onions-2 (medium sized) grinded to a paste
Cilantro-finely chopped-1/2 cup

Directions
1.Soak Rajma in 4 cups of water overnight.
2.In the morning remove the water in which the rajma were soaked and add 4 cups of water to them again and add a pinch of asafoetida and let the rajma boil in a pressure cooker.
3.Cook the Rajma in the pressure cooker for 3 whistles and then on medium low flame for 30 mins.
4.Grind the onions and garlic together.
5.In a medium size pan ,put the 2 tblsp oil and then saute the onion garlic paste on medium heat till it turns brown in color and has lost its raw smell.
6.Meanwhile grind the tomatoes, ginger and green chilli together to a paste.Th reason for the onion-garlic and ginger-tomato combination is that ginger burns quickly at higher temperature and then the masala will carry the burnt ginger taste in it,if we saute the ginger with onion and garlic.
7.When the onion-garlic masala is sauted, add turmeric powder, red chilli powder, salt, coriander powder and garam masala.
8.Add the tomato ginger paste and let it saute. It will be cooked till the masala comes all together and leaves the side of the pan and also start leaving oil.
9.Once the rajma in the pressure cooker are cooked and the pressure is released.Add the Masala to rajma and let it cook on medium heat for few minutes to let it mix and boil.At this stage if you feel that rajma is not cooked enough (is not soft) ,add a little water if the gravy is too thick and put on the pressure cooker lid and let it cook for 2-3 whistles.
10.Mix in some of the cilantro and save some for the garnish.
11.Voila Rajma masala is ready.Serve it with Naan, or Matar Pulao.
12 Side dishes that go good along with Rajma are Boondi Raita,Vegetable Raita,Gobhi Aloo,Paneer Achari,Pickled Onions ,Masala Papad etc.

This Goes to Superchef for her event My Legume Love Affair and to Susan of The Well Seasoned Cook.

Tips
1.Every Pressure cooker is different. Some may or may not take a longer time to cook the Rajma.
2.In step 2 I said replace the water in which the rajma were soaked with fresh water. This is a tip which I learned to reduce the gas (bloating) feeling you get after eating beans.Trust me it works for every bean.I added asafoetida for same reason.
3.If you want to make rajma in a jiffy, you can get canned Red kidney beans from the store.Don't use the water they are soaked in as it has lot's of salt.Instead rinse it in fresh water and if the kidney beans do't look soft enough cook it in pressure cooker with enough water.
4.When I am planning dinner parties,I make the onion tomato masala well ahead of time and keep it in fridge. It stays fresh. The recipe for the masala and storing it can be found here.

2 teaspoons ground cumin,
1/2 teaspoon ground cardamom
1/2 teaspoon turmeric
Salt and pepper
2 cups chicken or vegetable stock
1 (28-ounce) can fire roasted tomatoes
1 cup plain yogurt
Warm pita, any flavor or variety, toasted

Directions1.Heat a medium pot with extra-virgin olive oil over medium heat.

GINGERY CREAM OF CARROT SOUP

For the last 2 weeks the weather here in Charlotte has been awful.Cold, more cold, some sleet, some snow, then rain and more rain and much more rain.Do I sound like a weatherman?Well I feel like one.Seeing the weather forecast everyday hoping the sun will come out and all miseries will go away.To top it this year the groundhog predicted 6 more weeks of winter brrrrrr.I can understand people staying up north must be thinking why this complaining about cold weather, but you need to understand...we southies hate grey skies. That was always one benefit I could count when I moved from ever drizzling Seattle.
Well this God awful weather can either force you to eat comfort food which can be fried stuff, pakoras, chaat etc or you can go the healthy way, have some hot soup,Garlic bread etc.
The Carrot soup is easy to make and is sinful.  Althought trust me my first try at making carrot soup was a disaster. This was more than a year back,my DH was recovering from flu.I made the blah version of the carrot soup and he said"it tastes like blended gajar ka halwa without sugar".Ha ha ha.Men have the same way of describing food as kids, don't you agree? But this did not deter me and my quest for good carrot soup recipe lead me to a recipe which is a mix this and that.Well here it comes.

INGREDIENTS
7 cups chicken, or vegetable stock
2 pounds fresh carrots, peeled
1 big yellow onion
1 leek, sliced in half lengthwise and thoroughly cleaned
4 stalks celery
2 tablespoons olive oil or vegetable oil
1 (3-inch) piece fresh ginger root, peeled and grated
1 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 tsp red pepper flakes
1/4 tsp Italian Seasonings(optional)
Salt and pepper to paste

DIRECTIONS
1.Cut all the vegetables(except ginger) into 1/2 inch pieces.
2.Roughly chop or grate the ginger root.
3.In a heavy bottomed stock pan, over medium-high heat,1 tblsp of Olive Oil.
4.Saute vegetables with ginger and nutmeg for approximately 15 minutes, or until vegetables are browned.
5.Add remaining olive oil as needed.
6.Add vegetable stock to the vegetables and let them cook(covered) for 30 mins on medium heat.
7.Let cool to room temperature and then puree in a blender. Soup should be thick and smooth. If you like your soup velvety smooth, pour through a fine mesh strainer.
8.After straining the soup, pour it again in the stock pan and let it boil, add Salt,Black pepper,Red pepper flakes and Italian seasonings(optional).
9.Serve hot with Garlic Bread or for something hearty Bruschetta or Focaccia Bread.
'njoy!!!

RED SOUP

I LOVE SOUPS !!!! I think most of you may be knowing this by now.Every few days I have these cravings....I just want to have some kind of soup. Some people have a misconception that soups cannot be filling....but they can be.Just pair them up with some other dish...like a Salad,Sandwich or just any kind of bread...french,Italian,Garlic etc.Even Focaccia tastes great with soups.
Last night I wanted to make tomato soup.I had not made it in a long time. While taking out the ingredients from the refrigerator I saw I had one betroot hiding behind some other veggies and said "why keep one betroot?".Turns out it changes the color of soup completely...tomato soup turns from dark orange to almost blood red.Delicioso!!!!

Ingredients
3 large tomatoes - roughly diced
2 large carrots diced
1 medium beet- peeled and sliced
1/2 medium onion-sliced
2 celery sticks-diced
4-5 cloves of garlic - peeled
1/2 inch of ginger-roughly chopped
1 tsp dried basil
1 green chilli chopped (optional)
4 cups water
1/2 cup Jaggery
Salt and pepper to taste
Fat Free Sour Cream -to Garnish

Directions
1.In a pressure cooker put all the chopped vegetables and water.
2.Pressure cook for 3-4 whistles and then keep the flame on medium-low for 3-4 minutes.
3.The reason to cook it for so long it to cook the vegetables till they turn into mush.
4.If you dont have a pressure cooker, you can even do it in slow cooker or boil it for 30-45 minutes to achieve the mushed up consistency.
5.Wait for the cooker to cool down and drain its contents in a colander and reserve the liquid.
6.Blend the vegetables with some water to make a fine puree.
7.Add Jaggery to it.(My reason for adding jaggery instead of sugar is that it increases the iron level in your blood. Its the same even for beetroot..it increases the hemaglobin.)
8.Empty the puree into the cooker again( I am lazy!!! I don't want to wash another utensil.) .Add the remaining liquid and bring the soup to a boil.
9.Add Salt,Black pepper,Dried Basil and let the soup simmer.
10.Serve hot with a spoon of sour cream.
'njoy!!!

PANEER BHURJI

Paneer is a type of soft, crumbly cheese native to India. It is one of the most common cheeses used in Indian cuisine, and it has a simple, fresh, versatile flavor which makes it highly useful in an assortment of recipes. The cheese is traditionally made with cow's milk, and it is readily available in many Indian markets. It is also very easy to make paneer at home.Paneer is also considered to be a fresh cheese, and it is never aged.Since it is made with whole milk, it is also very high in protein, making it a sound addition to a vegetarian diet.

Paneer Bhurji is a dish inspired from Anda Bhurji or scrambled eggs.Instead of egg,Paneer is scrambled here.

ROASTED VEGETABLES

Roasting Vegetables brings out the natural sweetness in vegetables and intensifies their natural flavors. For diet-conscious folks, roasted vegetables add wonderful flavors to dishes without a lot of fat and calories. Roasted veggies like garlic, potatoes, and carrots can also work wonders as fat substitutes in recipes for mashed potatoes, sauces, cream soups, and casseroles.
This recipe of roasted vegetables is Indian style. The ingredients used for marinating the vegetables are typical Indian spices and the end result is wonderful.

WHOLE WHEAT PIZZA

Pizza is many things for many people,a food category associated with take outs.A food that you order when you don't have time or when unexpected guests arrive and you can't cook...but it is never considered a healthy food. The following recipe is that of A Healthy Whole Wheat Pizza base which has a nutty flavor and rich in nutrients and fiber.Top it with you choice of toppings and this is one dish out of this world.(For picky eaters add more vegetables as toppings and voila your picky little one has gobbled up everything but the plate.)

Ingredients
1 tsp White Sugar
1 1/2 cups Warm water
1 tbsp active dry yeast
1 tbsp olive oil
2 cups whole wheat flour
1 1/2 cups all purpose flour

Pizza Sauce

Toppings:-
Green Bell pepper
Sun dried tomatoes
Yellow Bell Pepper
Olives
Sweet Onions
Mozzarella Cheese

Directions
1.In a large bowl dissolve sugar in warm water.Sprinkle yeast over the top and let stand for 10 minutes until foamy.
2.Stir the olive oil & salt into the yeast mixture, then mix in the whole wheat flour & 1 cup of all purpose flour until dough starts to come together.
3.Tip dough onto a surface floured with the remaining all purpose flour & knead until all purpose flour has been absorbed ,and the ball of dough becomes smooth (about 10 minutes).
4.Place dough in an oiled bowl & turn to coat the surface.Cover the bowl with cling wrap tightly so that the air does not escape the bowl and let it stand in a warm place until doubled in size ( about 1 hour).
5.When the dough is doubled, tip the dough out onto a lightly floured surface and divide into 2 part for 2 thin crusts or leave whole to make one thick crust.
6.Form into thick ball.Let rise for about 45 minutes, until doubled.
7.Preheat oven to 425 degrees.Place a pizza stone on the middle rack of the oven.
8.Flour a clean flat surface and roll out the dough to the thickness you want.
9.With your fingers, form a slightly thicker raised rim around edge of the circle.
10.Bake the pizza base in the oven till the base firms up a little and will not get soggy when pizza sauce and toppings are put.
11.Take out the pizza base .Apply Pizza Sauce and put the toppings and cheese over the sauce and bake again at 425 degrees for 5 mins and under broiler for 1 minute.
'njoy!!!

Tips:-
1.In step 8, I said, flour a clean flat surface. This is very important as this keeps the dough from sticking to anything. Also pick up the dough and apply flour on top and bottom.Set the dough on the counter and then spin it in a circle with your hands on the sides. Try to get the flour on the sides of the ball and gently form it into a more perfect circle.

2.To press out the dough, start by gently flattening the dough ball, trying to maintain a circular shape.
3.Rips and Holes:If the dough tears near the end, lay it down gently on the counter. Look for a thicker area close to the hole. Stretch the thick part over the hole and press it down firmly to bond the dough together. Make sure to put extra flour underneath the patched spot because it will easily stick to the counter.
4.If you are serving this dish to guests, you can make the pizza base ahead of time and wrap it in cling wrap.Keep at room temperature.
5.Leftover dough...no problem.Wrap it again in cling wrap and keep it in fridge.Whenever you want to use it again take it out of fridge 30 mins before you want to bake it.Repeat step 4.
6.If you don't want to make pizza again and have leftover dough, roll the dough the same as you would roll the pizza base and sprinkle with fresh rosemary to make rosemary focaccia. You can even use dry herbs for that.
